Regarding an In-Home Gluten-Free Cooking Class...

OMG!! What an incredibly yummy and deliciously wonderful meal!! It was FANTASTIC! We loved EVERYTHING!! I honestly cannot believe how tasty and scrumptious the food was! And it was ALL GF? Honestly, you ARE incredible! Thank you Valeri! SO MUCH!! You were such a delight to have in my home and in my kitchen! I enjoyed your company, I enjoyed your tips on cooking and I really learned that I need to get off the "kitchen chair" and re-enter the world of cooking again and stop being afraid to attempt GF cooking. If I make mistakes....I'll just do it again...or better.....I'll call YOU...and have YOU do it right for me! I've already called my sister in law and, over "Skype", I showed her the cookbook and little Ethan was so excited and he read the title out loud! He was very excited! He is going crazy (as is my brother!!) over the chocolate pie!...Barry is still licking the fork! The meal was just scrumptious! You are a genius! No one would ever know that the meal was prepared with limitations to ingredients! The smoked turkey made the green beans pop! The chicken was so tender.... the mushrooms...OMG! I just don't know what else to say....Thank you! Thank you! Thank you!!!! Hope you had a safe drive back home and your allergies are better! You have given me hope about GF eating and cooking!

Regarding Our New Gluten-Free Cookbook...

Thanks, Valeri, I regularly use Pamela's products and keep some stored in my refrig all the time. I'll get back to you on the bread order, but wanted to send you a quick communication to let you know the cookbook arrived at my office today and I cannot wait to spend some time browsing through it tonight. I am thinking that I may cook my way through cover to cover much like Julie and Julia in the movie. For me, this cookbook is different from most for me. I KNOW your food is good so that cuts down on risk. With other gluten free cookbooks, one can buy all the ingredients and cook the dish and then if it is not good and not a "repeat' as I say, then one is stuck with some expensive ingredients to store. So I am excited by the challenge and will be glad to offer you input as I go so that you can tweak from printing to printing if you need to do so.

Back to you on the bread at a later date. Gotta go prepare some dinner for now.

Valeri: My mother, who has advanced Celiac disease, was planning to attend my daughter's second birthday party. So that my mom could eat without any concern, I had you cater the party. The food was absolutely amazing and my mother commented that it was so nice to be able to eat with abandon. She really enjoyed the mini gluten free birthday cake so she could once again, share in the joy of birthday cake. It was the gluten free birthday cake at my daughter's party that inspired my request to have you make my mom a gluten free birthday cake. Since she lives out of state, you and I discussed shipping it to her office as a surprise. As usual the best laid plans never go as planned, and you called to tell me that since you were not comfortable with shipping the cake, you were going to personally deliver it to South Carolina! After coordinating with my mom's office to maintain the surprise, you arrived with a gluten free cake, loaf of bread, and chicken and dumplings in hand! And when my mom saw you, tears of joy flowed! I can not thank you enough for making my mom's birthday so very special. It is not often that a consumer finds a business owner willing to go more than the extra mile to deliver what was promised and paid for. You did that and more. Thank you.

We LOVED the pizza...and bread!! We never get to eat stuff like this...the pizza was delicious...we couldn’t tell it was GF!!...and the bread is just wonderful. We are so happy. EVERYTHING was so good. We’re still in a bit of shock over how easy this all was...to order food...good food...to eat like a grown up and not have to worry about getting exposed to gluten. We’ve been living off gluten-free cereal and chicken & rice...for a while...a long while. This feels like freedom.

Hi Valeri, I just ate my first meal that you have prepared for me. I asked my husband if he wanted a taste (chicken and sausage jambalaya) and he said "not if it’s gluten-free". So I thought I would get to eat my own meal...Wrong. He said it smelled good so he wanted to try, after tasting it he asked if he could have half of it, to which I replied "No". It was great! It was a little spicy for me, but the flavor was so good that I kept on eating it even though it was burning my mouth a bit. I loved it. I will just have to learn to eat spicier food because it was that good. Thanks! Can’t wait to try my next meal!!!!

(This comment is in regard to a gluten free pizza.)  Valeri, Rob and I both loved the pies and we'll be adding them to our "favorites list."  The tomato sauce was delicate and delicious and the crust beats the competition's hands down!  Please tell Scott and Kim -  the last time we talked, she had not eaten a pie in 15 years.  Thanks for all your hard work, because you make our life so much easier.

Hi Valeri, I just wanted to let you know how much I am enjoying your meals!  I can't tell you how liberating it is to have delicious (gluten free) food that can be ready in a flash.  I especially like the sea bass, chicken marsala, white bean chicken chili and the asian grilled shrimp.  I have not tried all of them yet so I'm looking forward to the others.  Thanks, and I will defiitely be placing a new order soon.

Valeri, the food was superb! The combination of flavors with the rice and the marinade on the fish was just divine. We loved it! I still don’t like cod, but it was a mighty tasty dish!
